Southern Collard Greens w/Bacon

Ingredients:

1 TBSP olive oil

4oz bacon, cut into bite sized pieces

1/2 sweet onion, finely diced

3 cloves garlic, finely minced

2 large bunches collard greens

2 cups chicken broth

1-2 tsp red pepper flakes, to taste

2 tsp apple cider vinegar

salt & pepper, to taste

Instructions:

1. Wash and dry collard greens thoroughly.

2. Cut and remove the rib from the collard greens. Cut or tear leaves into 1 to 2 inch pieces.

3. Add oil to large skillet and cook bacon over medium heat until crisp. Drain bacon on paper towel. Reserve bacon grease in skillet.

4. Add onion to skillet and cook 3 minutes. Add garlic and cook an additional minute.

5. Add the collard greens to the skillet. Pour in the chicken broth and add seasonings (salt, pepper, & red pepper flakes), to taste.

6. Cover the skillet with a lid and cook for 30-40 minutes over medium-low heat, stirring every 10 minutes or so.

7. Once collard greens are tender, turn off the heat and mix in the cooked bacon and vinegar.

8. Serve it now.
